Cafe Shelburne is opened Tuesday through Saturday, closed on Monday and Sunday except on Mother's Day, UVM graduation and foliage season.

            While completing my culinary training in France, I worked with the famous Lyon's chocolate maker "Bernachon", one of the only chocolate artisans today roasting and blending his own chocolate beans to make his chocolate from scratch. Bernachon's philosophy for truffle making included using only the finest ingredients available. A truffle should be crispy on the outside while remaining soft and moist at its core.
